Filipino Chopsuey (also spelled Chop Suey or Chopsui) is a vibrant, saucy vegetable stir-fry that’s a staple in carinderias, fiestas, and everyday Pinoy tables. Despite the Chinese-American name (meaning “odds and ends”), the Filipino version is distinctly tropical: loaded with crisp-tender veggies, tender proteins, and a glossy, garlic-oyster sauce gravy, all served over steamed rice or with crispy noodles on top.
