About Lorena Jimenez Mercado | Founder & Heart of Mangan Tana
Lorena Jimenez Mercado is a proud Kapampangan native who immigrated to the United States with a heart full of heritage and a deep love for Filipino food. Born and raised in Pampanga—often called the Culinary Capital of the Philippines—Lorena grew up in a household where food was not only nourishment but a language of love. From an early age, she was immersed in the kitchen life, surrounded by the delicious aroma of traditional dishes prepared by her grandparents—both skilled kusineras for town fiestas.
She learned by watching and helping her Apung Estella, carefully slicing ingredients and preparing dishes that would serve entire communities during local celebrations. Just as meaningful were the quiet moments spent with her parents, Lely Jimenez and Abraham Jimenez, who taught her that cooking is more than a task—it’s a heartfelt expression. They showed her that even humble ingredients, when prepared with sincerity and care, can tell a powerful story. Her mother, Lely, often jotted down recipes by hand, including her classic traditional Kapampangan Papaya Salad—a treasured piece of family history still used in their kitchen today.
In 2019, Lorena formalized her skills through culinary courses, blending technique with tradition. Today, her cooking reflects the perfect harmony of both: refined yet deeply rooted in heritage. Through Mangan Tana, Lorena continues to share not just food, but the legacy of love, memory, and culture—served on every plate, and inspired by the generations who came before her.
